Mom's Scrapbook Meal Recipes


Ladies,

You asked for it so here it is...a link on my blog that will have Mom's recipes she has made for us at scrapbooking that you loved.

As she gives me more I will add them, but here are two of them to start with:

3. Chunky Chocolate Cookies:

1 package Duncan Hines Chocolate Fudge Cake Mix
2 eggs 
1/2 cup butter or margarine, melted
1/4 cup brown sugar (firmly packed)
1 tsp. vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans or walnuts


Preheat oven to 350 F.  Grease baking sheets.

Place cake mix, eggs, melted butter, brown sugar and vanilla extract in large bowl.  Stir with spoon until thoroughly blended.  Stir in chocolate chips and pecans.  Drop by level measuring tablespoonfuls onto greased baking sheets.

Bake at 350 F for 12 minutes for chewy cookies (cookies will still be puffed) or 14 minutes for crisp cookies.  Cool 2 minutes on baking sheets.  Remove to cooling racks.  Cool completely.  Store in airtight container.

2. Stove Top Chicken Casserole

6 Chicken Breasts
Poultry Seasoning
Salt & Pepper
1 cup Grated Marble Cheese
1 can Cream Mushroom Soup
1/2 cup Milk
1 Box Chicken Stove Top Stuffing
1/2 cup Melted Butter


Grease a 9x13" pan.  Line the pan with six chicken breasts.  Sprinkle lightly with poultry seasoning, salt and pepper.  Top with one cup of grated marble cheese.

Mix together one can cream of mushroom soup and 1/2 cup of milk and pour over chicken and cheese.

Top with one box of chicken stove top stuffing mix and drizzle with 1/2 cup melted butter.

Bake uncovered at 350 for 50 to 60 minutes.  Serves six.


1.  Lazy Perogy Casserole

15 Lasagna Noodles
2 cup Cottage Cheese
1 egg
1 1/2 tsp. onion salt
1 cup shredded cheddar cheese
2 cup mashed potatoes
1/4 tsp. salt
1/8 tsp. pepper
1 cup butter or margarine
1 cup chopped onion

Cook noodles as directed, drain.  Line the bottom of a 9x13" pan.  In a bowl combine cottage cheese, egg and onion salt.  Spoon over noodles and spread.  Cover with a layer of noodles.  Combine cheddar cheese with potato, salt and pepper.  Spread over noodles.  Cover with a layer of noodles.  Melt butter in frying pan.  Saute onions until clear and soft.  Pour over noodles.  Cover.

Bake 30 mins. in 350 F oven.  Let stand 10 mins. before cutting.  Serve with yogurt or sour cream.  Serves eight.

Great with ham, poultry or sausage.
